Actually, "boyfriend and me" is an object pronoun, not an subject pronoun, so it would be me, not I.

There's actually no verb, so it can't really be an object or a subject, so I really don't know which it would be.

Technically, you're saying (This is a) conversation between my boyfriend and I, so there is a verb; it's just implied.
