She doesn't already have something homemade that only you can create.I agree with your idea of a painting or you could make her a collage of you two together. It could include inside joles and weird little things that will remind her of you when your gone. You could add a letter telling her how much she means to you and i can guarantee it wont be read just once.
Just give her something meaningful that she'll love for years and that came from the heart!
